Is there a good way to preserve lemon zest ? I'd think freezing the whole peel might work ... [View all]

But maybe a good rub with olive oil, or a light veg oil, first ? Slice it up ? Scrape out the pulp ? Make strips with a peeler ? Some combination of the above ?

I've seen dried lemon zest for sale, but is it worth it ? Kind of expensive, and it would take a long time to use it up, so would it be fresh enough ?
