But maybe a good rub with olive oil, or a light veg oil, first ? Slice it up ? Scrape out the pulp ? Make strips with a peeler ? Some combination of the above ?
I've seen dried lemon zest for sale, but is it worth it ? Kind of expensive, and it would take a long time to use it up, so would it be fresh enough ?

Great to add to anything and to make lemon pepper.

After about a month it was all dried out and flavorless, so I wouldnt recommend freezing for very long.

Get a good lemon zester, not a microplane. You get the zest from a whole lemon in 30 secs.
There's really no reason to save it up.

Fast and easy. Mine has 2 choices of cut. fine and a bit course.
