4. I don't think there's much of a difference between white and yellow unless one's a Vidalia.

I use shallots in cooking when I want a milder taste and red when I want a tangier taste. Yellow is the go-to for cooked dishes. My husband likes red onions raw in salad and on burgers, but I'm not a raw onion fan.
