What's for Dinner, Mon., Jan. 1, 2023, New Year's Day [View all]

Butternut squash soup. Not happy with this soup and am doctoring it up. Might have to engage the consultation services of the RG because nothing I've done so far makes it any better.

Zucchini bake: It also has scallion, garlic, lotsa' basil, mozzarella, and parmesan.

Now, dessert: My neighbor just dropped by with a few boxes of Belgium chocolates. Yum. I have had no sweets so far this holiday season. But I am planning on a dark chocolate truffle filling and an ameretto cream. Only 140 calories but who knows how bad the blood sugar will zoom.

My neighbor was all dressed up for Christmas: Christmas hat, scarf, etc., but the dog was the best. The dog, a furry white little charmer with a vigorous tail wag, had on a hand knitted coat (I assure you my neighbor, a therapist, did not knit it) that was red, white and green. Also a bow. Crazy happy to be out seeing the neighbors. Dogs: just so much fun.
