Butternut squash soup. Not happy with this soup and am doctoring it up. Might have to engage the consultation services of the RG because nothing I've done so far makes it any better.
Zucchini bake: It also has scallion, garlic, lotsa' basil, mozzarella, and parmesan.
Now, dessert: My neighbor just dropped by with a few boxes of Belgium chocolates. Yum. I have had no sweets so far this holiday season. But I am planning on a dark chocolate truffle filling and an ameretto cream. Only 140 calories but who knows how bad the blood sugar will zoom.
My neighbor was all dressed up for Christmas: Christmas hat, scarf, etc., but the dog was the best. The dog, a furry white little charmer with a vigorous tail wag, had on a hand knitted coat (I assure you my neighbor, a therapist, did not knit it) that was red, white and green. Also a bow. Crazy happy to be out seeing the neighbors. Dogs: just so much fun.

Had hoped to find pate & other interesting things for NYEve but didn't, so NYEve was boring, and no interesting leftovers. May open small bottle of prosecco if/when daughter & son in law visit.

(121,431 posts)carry very nice pates. And I can make a pretty decent one myself. And Prosecco is always in order!
I frequent 1 regional grocery store, and they had better varieties prior to covid. Trader Joe nowhere near, is close to friend's place which I visited occasionally years ago, but I'm now staying home (because I prefer to do so!)

(578 posts)with Swiss Chard for cooked greens (olive oil, garlic and pepper flakes). A little blue cheese for DH and brie for me as an appetizer.
Keeping it simple. The beans and rice are a big batch, so some beans will end up canned for future working-late meals.

I used my new Insta-Pot to cook it and it turned out just fine.
