14. A little something about Costco and their meat;

If you look at the label on a platter of sliced Ribeyes, you will see that their cooking recommendation is to cook the steaks to 160F ! Of course one hundred sixty Fahrenheit on a steak is way too well done. The reason they say that on their labels is because they use a needle style industrial meat tenderizer, something like this;


So they have to put the recommendation for the higher cooking temp to cover themselves from liability if cross contamination should occur. If you get a stomach bug because you cooked one of their steaks medium rare, they can just say "We told you so".

I asked one of their meat cutters if they do the same thing to the entire rib roasts and he said they don't.

So, the bottom line is: Don't buy their individual steaks. Instead buy the whole roast and cut the steaks yourself. It is a little cheaper by the pound and you won't have to worry about any cross contamination.
