3. A really abundant foodstuff in the SE US is kudzu

It is incredibly fast growing and what was originally supposed to be ground cover to anchor soil next to highways soon became a pest that downed power lines, crushed abandoned houses, overtook farm buildings, and generally made a nuisance of itself--BUT the leaves are edible with or without cooking and the roots can be dried and ground up as flour to be used in baking crackers, cookies, and used as a thickener in soups, stews, casseroles, and puddings.

Lots of edible plants are out there if we just stop being so damned particular.
