What's for Dinner, Wed., June 12, 2024 [View all]

Turkey meatloaf with vegetables. It has grated zucchini, carrot, and onion in it. I'm also putting in Swiss chard or spinach, not sure which.

AKwannabe gave me the greatest idea for the dish I made last night: add pasta and chicken to the celery/olive/pickled peppers mixture. I tried it last night with the sausage and it was so good, actually better than the original recipe. If I don't get my meatloaves done (I'm doing a couple for freezing, too), I may have this, trying the chicken tonight. I love it when we can compare recipes and vary dishes based on the experience of other posters. Thanks AKwannabe!

Mint-ginger-pineapple tea.

Dessert: maybe a few blueberries with some no-sugar ice cream.
