I've seen recipes for grilled romaine, grilled radicchio, grilled green and red lettuce. Lettuce soups, or you can use it in stir fry. If you have a juicer, juice the heck out of it all and freeze for use in soups throughout the year.

Sorry if it's ice berg. That's about the most generic bland tasting lettuce and pretty much only good for a wedge salad, in my opinion.
