3. You can totally use fresh sweet cherries.

Bing or Rainier or Black cherries will all work with this. They're all quite sweet, though, and we prefer it to be a bit tart.

Even frozen sweet cherries if you can find'em!

We found these lovely sour cherries at a farmer's market and bought them hoping we'd find a way to use them, and this seemed like the perfect excuse! Ontario has an embarassment of riches wrt. stonefruit.
