1. I made a bone-in turkey breast that stayed pretty moist

I put four pats of butter under the skin (also some thyme sprigs and garlic slices for flavor). Then I rubbed the skin with olive oil and roasted it without basting.

Your turkey salad sounds really good. Besides a couple sandwiches, I'll make enchiladas with my leftovers, the sauce and the cheese should make up for any dryness.
