Skipped from roasted turkey to soup in less than 2 days [View all]

I don't know what came over me, but I roasted a turkey Wed. night. I was going to my daughter's for Thanksgiving, but I thought it'd be nice to have cooked meat on hand. I have a boatload of turkey. it was a Butterball, and it is much dryer than other Butterballs I've prepared. I did everything the same as I always have. Anyway, I just put together a big pot of curried turkey vegetable soup, with barley and used some of the turkey for that. I also made a single serving of curried turkey salad (heavy cream, mayo, curry powder, Badia Complete and chopped turkey) This turkey salad is not sweet, but is very tasty. I warmed up a burrito shell and had a wrap with radishes and celery on the side. Later, and for the next several days, I'll have soup. I might make some turkey croquettes. I'll use any recipes that will add some moisture to the meat.
