8. Beef ribs

It's been a chilly and raw day in the Catskills. As we knew we would work outdoors all afternoon, we decided this morning to make some comfort food for dinner.

Four big meaty beef ribs went into the crockpot at 1:00 pm. They were seasoned with rosemary, thyme, garlic, a dollop of bacon grease, red wine, onions, salt & pepper.

Meanwhile, we got a butternut squash and made French fries out of half of it. The fries were coated with olive oil and salt then cooked in our oven's air fryer at 400 degrees for just under an hour. The fries needed to be turned a few times. They were perfect!

The meat 'n' taters were complimented with Le Sueur peas.

Dessert is a movie musical, Klondike bars and a snifter of brandy.
