OK, so here's a "poor man's " food [View all]

I got this recipe from an old friend who passed a few years ago (Thank you Mavis). She grew up in Crawford county GA, from regular folk stock. Keep in mind, these people made their own bacon. No over-priced store-bought stuff for them. They MADE it every fall, and Mavis helped with the slaughter, smoking, and butchering.

Egg Gravy with Bacon

Fry 10 slices of bacon till crisp. Drain and crumble. Add 4 Tbsp flour to the bacon grease. Stir and let cook over med low heat for about 1 minute. Beat 4 eggs till thick and add 4 cups milk, 2 tsp salt and 1/2 tsp pepper. Mix well and pour slowly into the bacon and flour mixture. Heat slowly till thick, stirring constantly. Add crumbled bacon. Serve over toast or biscuits.

I cut the recipe in half. That's a LOT of food.
