Crackers with smoked salmon dip. Baba ganoush. Roasted the eggplant last night.

After that, a vegetarian sandwich: bocconcini with breaded eggplant slice, roasted red pepper, and tomato slices with basil. I'm using a variety of breads: naan, rustic rolls, and flax seed wraps.

Pineapple-peach kombucha.

Dessert: Dark chinese tea and a new to me kind of apple: Ambrosia. I'll prol'ly dip the apple in cashew butter.

Bargain tip: those of you who have a Shoprite , they have red peppers for 99 cents a lb this week. I bought a bag and a half of them for a little less than $3! Roasted them for my roasted tomato and red pepper soup and decided they were so good I'm going back for more today. They will always last in the refrigerator marinated in olive oil. It did take me awhile to wash and de-seed them, so if you're going to do it, be sure you have the time to process them.
