I love lentils, too, but haven’t been cooking for myself much lately because I ate at work all the time.

Was thinking about a delicious potato and lentil salad recipe I used to make and dug it up if you are interested. It’s so easy and yummy, it was one of my standard “going to a bbq, gotta bring something” dishes (that, and sesame green beans were always a big hit):

3/4C dried green lentils
1 tsp salt
2 3/4 C. cold water
4 small to medium potatoes
3/4C finely chopped onion
3 cloves minced garlic
1/4C chopped, fresh herbs (parsley, basil, tarragon)
3TB minced scallions
1/4C EVOO
2TB red wine vinegar
1/2 tsp pepper

Boil lentils with 1/4 tsp of salt, till tender, about 45 min

Boil potatoes till tender, then cut into medium width slices

Gently combine potatoes and lentils in a bowl

Add everything else and toss gently

You toss it while warm and it’s great eaten at room temperature.
