Roast Chicken Thighs with Sheet Pan Tomato-Onion Compote.

Found this recipe in a new cookbook called Simply Tomato by Martha Holmberg. It's easy, which is important to me tonight because I have to work and will want something fast for when I return. I have all the prep done and just have to put it in the oven. Calls for onion, garlic, thyme, marjoram or rosemary. Olive oil, lots of cherry tomatoes.

If you're looking for ways to use up more of your tomatoes, check your library, which is where I found this book. Has lots of colorful illustrations.

The next recipe I want to try from this book is a salad which combines tomatoes and peaches.

Dessert: iced coffee and a Zaini chocolate.
