Super tough frozen corn [View all]

While I was down with a broken ankle, my son took over the grocery shopping, which somehow resulted in half a dozen bags of frozen corn in those steamer bags. Last week I microwaved one and it was the toughest, most fibrous corn I’ve ever had—like they had frozen feed corn. This morning, I threw some more of this frozen corn into the InstantPot to see if pressure cooking it would help. Nope, still very chewy. The rest is all going to the compost pile.
