In our version of the Danish baked good known as drømmekage (dream cake), a light, fluffy vanilla cake meets a buttery coconut–brown sugar topping.
Our Sunday baking for weekday enjoyment: this fluffy vanilla cake (drømmekage, or “dream cake”), taught to us by “Downtime” author Nadine Redzepi Its dreaminess comes from a light crumb, contrasted with a gooey, glossy coating of caramelized brown sugar and coconut. Whip it up for dessert or midday snacks, and enjoy for up to two days.
