tried a new method for Red Velvet Cake [View all]

The eggs are separated, with the yolks mixed into the batter and the whites beaten into a meringue and folded in after everything is mixed in. This makes a very nice cake with a fine crumb. (this is the same method for German Chocolate and Italian Cream Cakes)

If I were making this for myself I would use Ermine Frosting instead of cream cheese. Ermine is the original frosting for Red Velvet Cake. It isn't very sweet and is light and creamy.
