Made A Turnip Puree Today [View all]

I was going to make seared scallops with a butter sauce. While getting produce, the idea of making a turnip puree popped into my head.
Three turnips, cut into about 1" cubes,boiled until soft. Put a half cup of milk & about 2 ounces of half & half in the blender. Added a pinch of salt, a bit of cinnamon, a pinch of brown sugar and a couple of spoonfuls of the boiling water from the turnip pot.
Then added the strained turnips & pulsed the blender. Then I added one drop of vanilla extract & a little more salt.
My wife flipped over them.
I served them as a bed for the scallops. I prepared both plates so they looked pretty. Should have taken a pic. Too late now.
I had julienned yellow peppers, dice shallots, and mushrooms with white wine as the veggie.
The puree was the best part of the dish & we love scallops.
Glad I thought to try it.
