8. It's got to get above freezing during the day

and below freezing at night, to make the sap really flow. I have to say, since I moved to NY seven years ago from the Pacific Northwest (a land well renowned for culinary delights) I have been enchanted by the true taste of maple in the syrup produced in this region. I just can't go back to Mrs. Butterworth.
