What's for Dinner, Sat., June 6, 2026

/Crab cakes and potato salad.

I'm continuing my refrigerator clean out and I am finding this cookbook by Allison Roman to be inspirational. It is entitled Something from Nothing.

Kombucha: cherry.

Dessert: Apple Blossoms, a pastry that I can put in the air fryer.

1. A wrap

Flour tortilla wrap filled with

Shredded leftover steak that was very tough
Salsa
Green sauce (jalapeno, cilantro and lime)
Shredded mixed Mexican cheese

Heated in the microwave, then served with a dollop of sour cream and a few dashes of red hot sauce.

All of the items were open in the refrigerator and needed using.

Ducky couldn't have those ingredients so he happily made do with a broccoli stalk, baby carrot and some of the shredded cheese mashed down on his dry food.

Stuffed with ground pork enlightened by seared crimini mushrooms and olive oil sauteed onions and garlic. Toasted fennel seed, chopped, oregano, a touch of cayenne. Bound with egg and bread crumbs. A little shredded cheddar blended in and a touch on top.
Best stuffed peppers I ever had. My wife asked if I kept the recipe. Told her we have two more for Monday.
Shrimp tacos for tomorrow night.
Home made whole wheat biscotti for post nibble.

7. Vegetable Curry with Tofu

Steam-fried in evoo and veggie broth: chopped onion, green pepper, cauliflower florets, sliced mushrooms, minced garlic and ginger. When almost done I added a slurry made of curry paste, more veggie broth, air-fried sweet potato and tofu cubes. Served with brown basmati rice and a plant-based raita. Cheers!🥂
