What's for Dinner, Sun., May 31, 2026

It's a lazy day here, so since I have to go to Trader Joe's anyway (next to the PetSmart--need cat food), I'll choose some easy convenience food. Don't know what yet. Will post back if it's anything interesting. Palak Paneer is likely and I just might get two. I am waiting for a few hours to go because their parking lot is crazy on the weekends.

And of course their desserts are tempting. They have reasonably priced ice cream in flavors not even the ShopRite has. Orange mango ice cream bars. Mmmmh.

I might do my own dessert. I figured out a really good one: take a salted caramel unbaked chocolate chip cookie (available at Aldi) and put it in the air fryer. Then put it on top of low-sugar vanilla ice cream. Outrageous.

A full rack of baby back ribs marinated in olive oil, spices and s&p. Slow grilled (covered) on medium-low heat for several hours. Served with spicy bbq sauce on the side. Corn on the cob and a tomato & cucumber salad to round out the meal. Well split a banana split for dessert.

We’ve started to plan a sailing cruise from NYC to Acadia Park in Maine departing just after the Fourth of July lasting through August. Accordingly, the First Mate has begun her long-term outline for provisioning the boat. As usual, we’ll have fresh food for 4-5 days then dried & canned goods until our next port of call. Very exciting!

A crockpot of well-seasoned black beans over dirty rice.

Grilled chicken breasts in a chipotle/adobo marinade.

Grilled red onions, green and red bell peppers in the chipotle/adobo marinade.

Beans and rice in a bowl, topped with chicken slices and peppers and onions with a dollop of spicy guac to top it off.

Steam-fried in evoo and veggie broth: chopped onion, orange bell pepper, chopped broccoli, sliced carrots, mushrooms and minced garlic. When done I added dried oregano, basil, red pepper flakes and chopped parsley, then stirred in cooked organic farro wheat to finish the dish. Vegan parm on top after plating. Cheers!🥂

Just basic garlic butter rice (you can find recipes for it online) with lardons of bacon.

Quite tasty.
