What's for Dinner, Sun., May 24, 2026

It's cool and rainy here, so I'm glad I have soup already made. It's 56 with more rain forecast today.

I added more items to my spinach and ricotta tortellini-chicken soup. I made more broth, which I pureed and added to the soup to make it thicker. In addition, I'm adding Canadian bacon bits.

Corn bread and chocolate chip cookies are baking in the oven. The corn bread will be good with the soup. Cookies are still baking; I have a chocolate craving and can't wait until they're done.



Dessert will be coffee and the cookies.

3. Eggplant casserole

I made it yesterday, but went to dinner. Nice to have it ready to eat. I used the rest of the spaghetti sauce, used eggplant, spinach, onion, garlic, Mozzarella, Parmesan and feta cheese. I made some pasta shells. Had 1/2 slice of sourdough garlic toast with it.

Strawberries for dessert.

It's cool and rainy here. Glad we didn't plan a cookout. We would've been rained out.

I’ve got a bag of soy curls. I know what I’m tossing in the Instant Pot for tomorrow—BBQ sandwich filling! Also need to head back to the market because we already buzzsawed our way through our recent sweet corn purchase—bicolour 4/$1 and soooooo good!

Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, broccolini, and minced garlic. When done I added cannellini beans, fresh chopped basil, oregano, parsley and red pepper flakes. Served over chickpea penne. Cheers!🥂
