What's for Dinner, Wed., Mar. 4, 2026

Vegetable soup with cannellinis and black beans. Garlic. Also has baby spinach leaves. I used vegetable broth, but added Better than Bouillon for additional flavor.

Ciabatta rolls with butter and garlic, toasted in the air fryer.

Ginger kombucha.

Dessert: a few chocolate eclairs.

~ Giant salad with iceberg lettuce, tomatoes, black olives, assorted chopped nuts, dried cranberries, hot pepper relish and homemade ranch dressing
~ Side of cottage cheese
~Side of baby petite peas with a teeny bit of butter and pepper
~Half an “everything” bagel, toasted
~ Lemon water
~ Dessert- old fashioned cocoa later because unfortunately I don’t have one of NJ Cher’s chocolate eclairs

Red snapper cooked Francese style. Floured filets sautéed in butter, olive oil and white with with capers served with steamed spinach and rice. Watermelon cocktails for dessert.

Another tomato-less version. Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, broccoli, zucchini, sliced mushrooms and minced garlic. When done I added vegan sausage crumbles, chickpeas, dried oregano, basil, hot pepper flakes, fresh chopped parsley and cooked organic quinoa and gave it a good stir. Vegan parm on top after plating. Cheers!🥂
