What's for Dinner, Tues., Feb. 17, 2026

Posting early due to working late.
I made orzo with fresh parsley and lemon to go into tonight's version of chicken soup. Good thing, too, 'cuz I have to leave now for work and won't be back until late. It will be nice to have dinner already made when I come home.

Decided to leave the kombucha unflavored for tonight. Turned out great!

Dessert: Honeycrisp apple.

Jambalaya with rice, chopped onions, celery, and bell peppers, lots of spices, and cubes of chicken, sausage, and shrimp. We're going a little Creole by adding tomatoes.

Fresh rolls and tequila along with ice water and chocolate ice cream for dessert.

Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, sliced carrots, shredded cabbage, mushrooms, snow peas, water chestnuts, minced ginger and garlic. When done I added some air-fried Beyond Steak pieces, a few Tbsps of garlic ginger sauce and tossed everything with cooked whole wheat spaghetti. Chopped scallions on top after plating.
Happy Chinese New Year…the year of the horse. Cheers!🥂
