What's for Dinner, Sun., Feb. 15, 2026

I've been making chicken noodle soup using my own broth, which I started a couple days ago.

Love it because I can make a lot of something and freeze it for another time. I also was cleaning cabinets and found those seal a meal things and the machine to do it. I am gearing up for gardening season, when I will have little time to cook. Having pre-cooked meals in the freezer will give me the time I need in the gardens.

To make the chicken soup different for each serving, I'm:
--making the noodles separate
--making lemon parsley orzo
--making matzoh balls

Then I'll just add whichever one I want to the soup.

In addition, I'll have a few herb mixtures:

--chopped cilantro and scallion to put over the top
--chopped rosemary
--chopped parsley

Also, I air-fried the carrots and gave them a very scant honey-thyme glaze.

If I have the energy, I'll make cornbread with tiny cheddar cubes and green chilis.

Kombucha: Tangerine, using fresh tangerine juice that I squeezed.

Dessert: almond biscotti and Earl Grey tea.

Grilled red snapper served with a mango salsa over rice. Marinated then grilled asparagus and a Chilean white wine.

It’s Carnaval in Central America and it’s crazy time! Lots of people living it up 24 hours a day.

and large diced zucchini. Canned diced tomatoes and canned, washed white kidney beans. Allspice as an accent.
Spiced and herbed Patagonia bay scallops seared in EVOO and butter.
Leftover veggies for lunch tomorrow.

Cod fillets with a potato and herb crust - from the freezer purchased all ready to bake
Baked acorn squash - nothing fancy just butter

Just returned from one of our favorite Thai restaurants. I ordered Pad Prik Khing, a spicey stri-fry with green beans (one of my favorite Thai dishes) and steamed tofu. My wife had a green curry with mixed vegetables and shrimp. Brown rice on the side. Cheers!🥂

with dill and house-made tarragon vinegar, baked potatoes, roast broccoli with garlic and Parmesan. Also grapefruit, it's a nice contrast and I never seem to have time to fix it in the morning. Dessert is leftover raspberry mascarpone tart.

to your raspberry mascarpone tart at the bakery at our local ShopRite. They said it was an in-house creation. Sure looked good but they had too high of a price tag on it. Decided I'd give it a try on my own.
