What's for Dinner, Sun., Jan. 18, 2026

Edamame salad with Cilantro Lime Dressing.

Has red, gold, and green peppers, red onion, and scallion mixed with the edamame.

The dressing is lime juice mixed with cider vinegar, cilantro, agave, cumin, and avocado oil.

Soup is tomato basil with mozzarella added. Sliced basil over the top.

Freshly baked hot honey corn muffins. Mixed in cubed cheddar.

Cherry-apple cider kombucha.

Dessert: Hot Earl Grey tea. Maybe a shortbread cookie dipped in blackberry sauce.

Half an everything bagel with a slice of havarti with dill cheese
Lemon water

I made the meatloaf with crackers instead of oatmeal, to keep it low fiber. I've been making cream sauce with chicken broth, almond milk and heavy cream, to keep it on the bland side. I put some miso paste in today, getting probiotics in.

I thought the crackers would make the meatloaf salty and the miso would make the potatoes salty, but neither were salty.

Glazed fresh tuna steak seared on the outside and practically raw on the inside.

Served with mixed vegetables, carrots, broccoli and string beans with a side a homemade French fries.

Green tea ice cream for dessert.

so far: a flour tortilla with butter, half a slice of pizza, a handful of goldfish crackers. mmm healthy carbs! might have some leftover vegetable beef soup in a bit. or I may crash. been a long day.
