...and From the East: BANANAS SINGAPORE 🌞

BANANAS SINGAPORE



4 bananas, slightly green-tipped
1/2 cup flour
1 1/2 Tbsp. melted margarine or butter
2 tsp. curry powder
1 tsp. black pepper
2 1/4 cups hot chicken cleaned (fresh, frozen, canned) consomme or bouillon
1 to 1 1/2 Ibs. shrimp, cooked and cleaned (fresh, frozen, canned)
2 1/2 cups cooked rice
1/2 tsp. salt

To prepare curry sauce, melt margarine; blend in flour, curry powder,
salt, and pepper. Add hot chicken stock, consomme, or bouillon. Cook
until thick, stirring constantly. Peel bananas. Keep whole or cut into
halves lengthwise or crosswise. Place in greased baking pan. Brush or
coat bananas with melted margarine. Pour 1/2 curry sauce over bananas.

Bake in moderate oven (375°) 15 to 18 minutes, or until bananas are
tender. Heat shrimp in remaining curry sauce. Serve with bananas on a
bed of hot rice.
