Cavatappi with spinach and artichoke, sprinkled with Parmesan.
Later on, I'm going to fire up the grill for a couple eggplants, both Black Beauty and Japanese. I will make baba ganoush, which is so easy and fun on a hot summer night. I have loads of fresh parsley in the garden.
Will serve with pita bread crackers and cold cucumber slices, carrot and celery sticks.
For dessert, cold cantaloupe.
Kombucha is cherry.

I do prefer to make my own, though. If you search Pinterest, you can find lots of meatless recipes. Check out It Doesnt Taste Like Chicken for some of the easiest and best recipes for beginners, or the Seitan Appreciation Society on FB.
Note gluten flour (the protein part of the wheat berry) is usually a major ingredient for seitan, and you usually steam your wheat meat and let it rest overnight to get the right texture.
