What's for Dinner, Wed., July 23, 2025

Thai wheat noodles with peanut sauce. Sliced cucumbers. Crispy tofu squares.

Lots of veggies to mix in, too, like carrot strips, baby bok choy, zucchini strips, scallions, broccoli leaves, plus sesame seed, toaasted.

I have a pic, but postimages is down. Might add it later.

Anyway, these Thai noodles are from TJ's. They come pre-cooked so it's really easy to make a dish with them. There are 3 packets in each package. Inexpensive, too--IIRC around $2.99. Not my pic below, but will show the package design. Warning for originalists, Thai people say these aren't authentic and that a real Thai noodle dish would call for rice noodles.

Still eating light, so I'll make egg drop soup for dinner, maybe with toast and definitely decafe tea

They’re one of my go-to work lunches and only. need a good drizzle of Szechuan or peanut sauce, though at home I’m more likely to toss them in a soup or with mixed veg. Way more satisfying than those cheap ramen noodles.

...with fresh basil, olive oil, balsamic reduction, salt and pepper. On toasted rye. And some leftover clam chowder. I'm on my own tonight, and that's what I want!

6. Air-fried Cauliflower, Chickpeas and Couscous

While the seasoned cauliflower florets were being air fried I prepared a box of whole wheat couscous. I also steam-fried in evoo: chopped onions, leeks, sliced carrots and minced garlic. When the veggies were done I blended them with the couscous, cooked chickpeas, cauliflower, chopped fresh parsley, and chives. Cheers! 🥂

7. I had a salad

I made a pasta salad that contained ham, bell pepper, onion, and celery and dressed it with Italian salad dressing. Served it on top of a bed of red leaf lettuce w/ torn basil (from the garden), cubes of cheddar cheese, and a hard-boiled egg.

Rice krispy treat for dessert.
