Veggie burger made with quinoa and black beans, topped with (more!) veggies, like thinly sliced zucchini, grated carrots, and radish sprouts tossed in vinaigrette (homemade). Pita bread.
Bitter greens leafy salad. It has escarole, romaine, radicchio, parsley, chives, dill. More vinaigrette, this time citrus flavored. Recipe is from Alison Roman web site.
Ice water.
Dessert: cold cantaloupe from the frig, along with blueberries or blackberries, not sure which.
We are getting a big thunderstorm momentarily! Maybe an inch of rain. We need it.

(40,729 posts)to other light summer recipes. As soon as I saw the peach on the ham, I said "balsamic drizzle would be good!" and sure enough, she had that next.

heavily sprinkled with parmesan cheese, from garden fried zucchini, mashed potatoes and gravy.
Cantaloupe and watermelon before bedtime.
Good to hear you got rain. With this long heatwave it was getting pretty dry here too. My yard was starting to look like late August. We got 3/4" of much needed rain yesterday evening. First time in quite awhile that I didn't have to water the garden.
