Starting off with a snack plate, since I've been out most of the day, and am I ever hungry.
The plate has half a ham/Swiss cheese sandwich on marbled rye with Chipotle Ranch dip. Genoa salami on club crackers with mustard. Cherry tomatoes, cream cheese/walnut stuffed celery sticks. Cassava chips.
Later I'm going to invent a cabbage soup with garden herbs and hot sausage bits.
Broccoli with my favorite sesame sauce that I haven't made in an age.
Passion fruit-peach kombucha.
Dessert I'm unsure about. Might skip it and just have some berries with tea.

(23,637 posts)First, a sauce of sliced cherry tomatoes, garlic, chopped red and green peppers, onion, cumin and oregano with a dash of lemon. Then the fish will be sautéed in the same pan. Served with rice and a cucumber salad with olive oil, Balsamic vinegar, salt and pepper. Pinot Grigio and lemon ice-water. Panamanian chocolates for dessert.
We bought the fish from a fellow with a ceviche stand in Coronado, Panama. There's a lady who sells fresh fruits and vegetables from her roadside stand and she's become a go-to for us. It's all fresh and delicious!
ETA: The total cost for the dinner, including the wine, was under $15.00!

(40,121 posts)The RG travels internationally and often sends me pics of what he has at restaurants. Then he tells me the price, because I always ask. It is amazing to me how much more reasonably the rest of the world dines.
Now youve got me hungry at 5:26 AM.

(1,802 posts)My son made this. He added roasted salted cashews, which was a good addition. We also had kimbap from the Burmese store.

Guess Ill have to invest in a jar.

(1,385 posts)Chopped romaine and radicchio, sliced cabbage, red onion, radish, black olives, cherry tomatoes, pickled beets, tossed with TJs vegan creamy dill dressing. Canned salmon on top for protein. Cheers! 🥂
