Panang Curry Pumpkin Noodle Soup
I'm using my own pumpkin puree from the freezer; also has peanuts, coriander and cumin.
Recipe calls to supplement with vegetable broth. Coconut milk. Noodles. Finish it off at the end with fresh lime juice. Sprinkle the top with cilantro.
Small spinach salad on the side; cherry tomatoes, red onion.
Kombucha: 0. I goofed up on the bottling and won't have any until tomorrow. I want to
Water?
Dessert: Vanilla ice cream with pecans.

(20,406 posts)I cooked the salmon in butter and avocado oil, with some bacon bits, and salmon rub. I simmered the potatoes in water, with salt and a little butter, until the liquid was thick. My mother-in-law called them boiled down in butter potatoes, but they are simmered for an hour or more. If you do it right, they are divine Hers were always divine. Mine were always mixed results, but this batch turned out good.

(1,070 posts)Too exhausted to really exert myself, even with a kitchen now full of groceries. I managed a toasted PB and (vegan) Swiss sandwich, made with TJs dark pumpernickel, then chugged some Green Goodness (that Bolthouse Farms juice, NOT the Naked version).
Not exciting but satisfying! *sigh*
I keep seeing soup recipes that make me salivate so perhaps Ill manage a proper meal tomorrow. (Yay, its the weekend!! )

I'm working on the soup recipe to work with home-canned broth and lemons from the freezer. It was a little weak this time, although good. It'll be much better if I dilute the broth a bit less.
