What's for Dinner, Thurs., April 3, 2025

I'm starting off with a cold plate of seafood: shrimp with cocktail sauce, lemon; whitefish salad on crackers.

Tortellini soup (4 cheese kind in both spinach, tomato, and regular). It has lots of Parmesan in it, freshly ground black pepper. It will have a little sliced chicken in it, too.

Spinach salad with tangelos and red onion; fruit vinaigrette.

Kombucha: cherry.

Dessert: Turkish filled cookie. The filling is sesame and walnut.

My car pooped out after Hurricane Helene (ruined my clutch) and my son’s during Milton (tree crushed in the roof and ins. would not pay). We then found our rental house of 8 years was being sold out from under us, so have been limping along since December as we struggled to find an affordable place and then managed the move (still settling in). He’s been shopping for whatever he could carry on his bicycle (with one leg) and I’ve been getting by mostly on granola and frozen burritos. Not good.

Finally, FEMA paid for son’s car repair, done yesterday, and we went on the mother of all shopping sprees. Got a massive pile of groceries in the house after work and as he put it all away, I sat down at my computer and ate a couple handfuls of honey-roasted peanuts… and promptly fell asleep. (It’s been a horrific week at work, and I’m holding on until the snowbirds finally leave after Easter).

So… satisfied and yet not. Definitely plan to make up for this on Friday, though anything will be an improvement over what I’ve had lately. Very sad that I’ve been watching this forum for vicarious food thrills all this time.
