What's for Dinner, Fri., Dec. 27, 2024

Leftover Chinese, yum!

Kung Pao Chicken (chicken with peanuts).

I'll make some fresh stir-fry pak choy.

I still have some shrimp pancakes, too.

For dessert, I was able to get some Christmas tree puffed pastry cookies at Aldi.

…with assorted toppings: sour cream, chives, smoked salmon, applesauce, lumpfish roe.

Also a Brussels sprouts salad with pickled beets, roasted yam, candied pecans.

Roast chicken salad (includes celery, mayo, turmeric, horseradish, dill.)

Leftover cabbage casserole, with apples, potatoes, leeks, thyme, and sausage.

I can the bean mixture and it's in the pantry, so when I get home, I'll just have to make rice, heat the mix, slice up some green onions and get out the Tabasco.

4. Seafood... again!

One of my favorite things about the OBX is the fresh seafood! Our chosen seafood shop is in Mann's Harbor just across Croatoan Sound from Roanoke Island. The proprietor's French bulldog, Yoda, always greets us with joy and playfulness!

Tonight we're making bacon-wrapped sea scallops. They're marinating and we'll broil them; I pre-cooked the bacon about half way before wrapping it around the scallops. Served with lemon.

Steamed asparagus and long grain rice on the side.

Lemon glace for dessert.

And well seasoned. Crimini mushroom slices and broccolini seared in the same pan as the burger and mushrooms, with 2 cloves garlic and canola oil. Deglazed the pan with water and Maggi seasoning for a pan jous.

Early dinner for me. Going out soon.

7. Roasted a small Prime Rib using low and slow technique

200 degrees for 2-1/2 hours and then under the broiler. Perfect medium rare.

Served with a puree of turnips, rutabaga, onion, garlic, carrot and a side dish of baby carrots and edame.

8. Navy Bean Veggie Soup

I soaked dry beans overnight to prepare for today’s cooking. Stir fried in evoo: diced onions, carrots, celery, red bell pepper and garlic. When soft I added the soaked beans and veggie broth. This simmered for a couple hours until done. S&P and fresh chopped parsley before turning off the heat. Soup was garnished with crumbled Morning Star bacon. We also had a cole slaw with a vinegar based dressing, and toasted baguette slices as sides. Cheers!🥂

and the last of the beet salad from Christmas Eve (tip: if you use golden beets, the kitchen will not be various shades of pink for the next week or so).
