What's for Dinner, Mon., Dec. 23, 2024

Orange chicken, which is cut into small pieces, breaded, and has orange sauce on it.

Brussels sprouts in sesame with sesame seed.

Kombucha: Ginger.

Dessert: Lemon ginger cheesecake.

Ham and Swiss on rye with spicy brown mustard and a rare evening mug of coffee. Also a Fiber One chocolate fudge brownie, just 70 calories, but tasty.

I'm sure I'll have something more, but not a clue what. Perhaps a small bowl of the navy bean soup from Saturday.

I don't know how it's going to be prepared - I put Mr. Retrograde in charge of tonight's dinner. (Maybe I should tell him that).

Parboiled a couple red bell peppers. Then steam fried in evoo and veggie broth: chopped onions, shredded carrots, green bell pepper, and minced garlic. Added crumbled vegan sausage, sliced black olives and mushrooms. Blended everything with cooked red quinoa, and crushed thyme and a few pinches of sage. Stuffed the peppers and baked for about an hour. Drizzled a bit of olive oil on top when done. Cheers! 🥂

and warmed challah with butter. It was a late night at work and I'm keeping it simple for a couple days anyway..
