What's for Dinner, Sat., June 8, 2024

Baked Flounder & Shrimp in Lemon Cream Sauce.

Oak leaf lettuce salad with cherry tomatoes, scallions, radish, and red and yellow sweet peppers. Homemade vinaigrette.

Ginger lemon kombucha.

Dessert: Peanut butter cup soft serve ice cream.

1. Costco thick pork loin chop

The chop, currently marinading, is coated with olive oil, then salted and peppered, and finally coated with chipotle mustard. The mustard is locally sourced and "to die for". I will preheat the air fryer to 400 degrees and, when hot, place the chop in for 16 minutes or until the temperature rises over 145 degrees, turning once. I will probably need to baste a couple of times since the mustard is a bit runny, so I am cooking it in air fryer safe bowl. This is a newly discovered mustard so is an experiment. I will serve with steamed cauliflower and spinach.

yum. Sounds like mustard you might buy at a specialty store or maybe a farmer's market.
I love chipotle anything. I make my own chipotle mayo. It's great with ham or chicken sandwiches. Cheese sandwiches, too.

They had a shelf of pints of jams and this mustard. I bought some Pineapple preserves and this Chipotle mustard. Both are excellent and I bet I'll never find them again.

2. Creole Seafood Gumbo

I made a big batch of this last November and froze half of it. Yesterday my freezer stopped working (just for a little while) and I "discovered" the gumbo. We're defrosting and eating tonight.

It was good, it will be good.
Andouille, shrimp, scallops, cod, onions, tomatoes and so on and so on...mmmmm

We went ashore in Jamestown, RI and found a fresh seafood market. They had fresh, clean oysters and we chose a lobster as well. Very reasonably priced and the selection was exceptional.

Our fresh food was nearly gone so the supermarket visit was productive and we found a juicy strip steak.

So, a dozen oysters on the half shell with lemon, malt vinegar and hot sauce.

A steamed chicken lobster with melted butter paired with halves of a pan-fried N.Y. strip steak seasoned with black pepper and sea salt. Pan-fried spiced asparagus and fresh dinner rolls.

For dessert, orange slices, brandy and Chinese Checkers.

I'm home from petsitting, not very hungry, but tired. I was on the dog's bladder's schedule all week, and we all go outside by 6:30.
