What's for Dinner, Tues., May 28, 2024


Fresh corn cut from the cob and sauteed with pancetta, black pepper, arugula, and hot sauce.

The other half of my swordfish steak. I put a rub on it: coriander, cumin, and saffron.

1. slow baked pork back ribs

These had a dry rub of garlic powder, salt and pepper to start.
Now they have just been brushed with an off the shelf barbecue sauce. One cup diluted with about a third cup of apple cider vinegar.
They remain covered in a 230 F oven and there are likely two or more hours left to bake.
I usually finish them uncovered in a hot oven or under the broiler.

Sides have not yet been decided.

I haven't cooked any for a while. Our new pup took notice and unlike his predecessor didn't bark or get under foot but lounged close in the hopes of sharing.

We added coleslaw, but made with a sugar free creamy poppy seed dressing.

I like to cook off cob too. Fry that stuff in butter, baby! Making me think of elote now.
