What's for Dinner, Wed., April 24, 2024

Italian sausages which are just finishing up in the slow cooker. For tonight, the sausage with Dijon, fennel seed, and mayo on artisan roll.

A broccoli fritter and coleslaw with chipotle sauce and chopped turkey bacon over the top.

I bought some blackberries and made a milkshake for dessert with them, but I also intend to use the blackberries for flavoring kombucha.

2. "Marry Me" Chicken...

This cozy dish, which went viral on TikTok with claims that if you prepare it for someone, you will end up getting married, features boneless chicken breasts nestled in a creamy, tomato-y sauce. With wedding bells in mind or not, this dish comes together fairly quickly and is just as great for entertaining as it is for a family meal. In this version, the addition of tomato paste adds a bright acidity to the rich cream sauce and complements the sun-dried tomatoes. Serve with crusty bread to sop up all the juices as well as tangy green salad to balance out the sauce’s richness. Or, try it over pasta, rice or polenta.

It’s pretty yummy. My wife has a really arduous week, working late every night, so I’ll make a big batch of this and serve some tonight with angel hair pasta and some roasted Brussels sprouts drizzled with balsamic glaze.

We were gifted a pair of beautiful boneless ribeyes and I’ll pan fry them in olive oil and garlic and season with salt and pepper. Just before they’re ready, I like to put a small tab of butter on top of the meat, (don’t tell my cardiologist!).

We picked up a bag of baby spinach to steam up then drizzle with sesame oil and soy sauce finally topped with a dash of sesame seeds.

Basmati rice with cardamom pods.

A hearty Chilean red wine.

We’re planning a sailing trip from NY to Maine early this summer. I know we’ll eat well!

Your screen name reminded me of a story about the musician, Simon Le Bon from the band, Duran Duran. He owned an ocean racing yacht that he was sailing in the Fastnet Rock Race in England when the keel fell off the boat. The yacht flipped over and they had to be rescued by Royal Navy helicopter crews. Le Bon had the boat repaired and later sailed it in the circumnavigating Whitbread Race where they came in third.

The boat’s name: Drum.

Keel fell off?? Good lord yikes. I think it’s fascinating how the mast and rigging and the keel etc—being intact—make for a sailboat’s stability at sea.



ps…the first time I was on a sailboat was at my uncle’s place, Swan’s Island Maine. Magical. 😊

the lettuce is starting to bolt, so I harvested a head and chopped it up. Made a composed salad with the lettuce, the last of the peas from the garden, some beans, and some thin slices of leftover pork loin, dressed with a sweet Thai dressing I found in the fridge.
