Cheese-prosciutto tortellini. So far, I'm just thinking grated parmesan, olive oil, and freshly ground pepper for a topping.
Baby arugula salad, fresh picked from the garden. This arugula is beautiful! Sundried tomatoes, black olives, and toasted pignolis. Olive oil/lemon vinaigrette.
Did anyone see my roasted peppers that I did last night? Posted the pic this morning on the breakfast thread. I should put a few in the tortellini dish. I had read how to get crisp veggies on a vegetable roast at an Eating Well Magazine article. The trick is to use a large pan so the vegetables each have space around them. Pre-heat the oven, too, to 450. I used my convection oven option. Here's the pic:
Lotsa' garlic.
Dessert: blueberries and Greek vanilla yogurt with ginger tea. Crystallized ginger and toasted slivered almonds over the top. Decaf coffee.

(11,250 posts)Your roasted peppers look so delicious.The first time I roasted peppers I remember being quite surprised at how much the roasting process changed the peppers flavor. I recently had a roasted pepper soup.

The good sockeye salmon was kinda pricey, so I thought a spicy sauce would be good for the less-expensive fish.

(10,821 posts)cooked outside on the first sunny warm day this year. Will probably do a stir-fry with snow peas found lurking in the fridge, onions of course, and some sort of hot sauce. With rice. I'm toying with doing grilled oranges and ice cream for dessert
