Posting early due to working late.

Veggie sandwich on artisan roll. Mozzarella, chipotle pepper, roasted red and yellow sweet peppers, yellow squash slices tossed in basil pesto, roasted garlic clove or two.

Salad with carrots, cucumber, celery, and peppers. Also sundried tomatoes, black olive, stuffed green olives, and banana pepper rings. Caesar dressing.

Pineapple kiwi kombucha.

1. We are again taking advantage of our

unseasonably warm weather. So grilling hamburgers and I've already made the potato salad. Nice spring picnic food!

2. Soup

Roasted cauliflower. New recipe from Cookie and Kate (love her recipes). Turned out well. Served with hard rolls from Trader Joe’s and slices of Honeycrisp apples and sharp cheddar.

3. I have her cookbook "Love Real Food"

I always find recipes I want to make from it.

She's from Kansas City and now is able to support herself entirely with her site and cookbook sales.

She has a carrot cake recipe (no added sugar) that I hope to try soon.

It really is an extraordinary cookbook.

She might be the Mollie Katzen of the 2000s.

I love the pictures of her with her dog. She and that dog are quite the pair. There are quite a few pics of her with the dog in the cookbook.

7. Oh yes. Moosewood rocks.

First cookbooks I bought when I went vegetarian and then pescatarian 26 years ago. Love them.

in terms of diet and cooking. I know I always look at your menus and think I'd like to have that!

One of these days I'm going to photograph my dog-eared pages of Enchanted Broccoli Forest and Moosewood Cookbook and post them. I had to put them in a 3-ring binder. Clunky, but usable.

6. Pizza!

Mom came to visit this afternoon and brought me some groceries because she’s the best. Dad insisted she add two of their favorite frozen pizzas to the bag:
Screamin’ Sicilian Supremus Maximus

I can see why it’s their favorite. OMG, it was good!
Did I mention Dad is also the best?

For dessert: Brownies and frosty cold milk
