The beef was from a piece of a NY strip. There is some Rotini in there too.

This is actually a late lunch and I'm eating it now.

and a salad with green and red cabbage, carrots, red bell pepper, and a peanut dressing. The chicken is pretty spicy so I have some Leinenkugel red lagers chilling.

7. Huevos Rancheros

I made corn tortillas from scratch for the first time. Not bad, but next time they need to be thinner. They weren’t bad for this meal because the thickness worked well with the runny egg yolk.

Didn’t have any salsa so minced some green bell pepper and onion and sautéed them in a little butter and jalapeño lime vinaigrette. Added canned, diced tomatoes, chili powder, and Cholula and simmered for a bit, then added black beans. It turned out well!

White rice with shredded cheddar on top, and asparagus on the side.
Edit: Forgot to mention the glorious fried eggs!

Hot black tea to drink. Chocolate chip cookies for dessert.

that's the part just behind the gills and jaws. Roasted them, then flaked off the meat and served it over rice with a ginger/miso sauce. Pear, walnut, and blue cheese salad on the side.

Tomorrow or Monday's dinner will be a chowder made from the bony parts, some seafood stock from the freezer, and the rest of the hamachi meet.
