If you're trying to eat less meat

I tried this recipe for lunch just now and I was surprised how good it was! Only ingredient I left out was the red wine vinegar because I didn’t have any.

I mashed the garbanzos with a fork so they were still pretty chunky.

my lunch every day is a tomato sandwich and/or a cucumber sandwich. That's my favorite way to eat less meat!
