What's for Dinner, Mon., May 15, 2023

Posting early due to working late.

Zucchini tomato pasta.

Tossed green salad with turkey bacon topping, cukes, tomatoes, celery, peppers. Caesar dressing.

Dessert: Apple, Brie.

ground beef, red beans, tomato soup, whole canned tomatoes, long/ half slices of yellow onion...a very mild version. Served eith home made cast iron skillet corn bread.

Tofu cubes with shiitake mushrooms, onions and bok choy in ginger soy veggie broth with decafe tea.

Homemade, of course.

Must have at least 20 ingredients. And I threw in a small, hard piece of Parm for extra flavor.

Much time and dedication necessary, but the payoff is worth it.

I cooked the pork shoulder and BBQ sauce yesterday, and I'm going to make the slaw right now.

7. Pea and mushroom risotto

Used the pea pods to make a stock (at the price of fresh peas I'm not going to throw them out unused!), it's currently cooking slowly. Also threw in the 3 green beans that for some reason ended up in the bag with the green onions.
