What was on your plate for Easter dinner? Mine was ham, potato salad, coleslaw. Stuffed Cabbage and beets with onions

… which was breakfast (I made too much with the plan to get 2-3 meals out of it): Cold tofu scrambler, oatmeal pancakes with proper maple syrup, and fresh strawberries. I predict the leftover leftovers will be my work lunch tomorrow, as well. Good thing I haven’t made it for ages and don’t mind the repeats.

7. Baked Thick Ham Slices

Got already cooked (boiled hsm) in quarter inch slices.
Soaked them in coconut liqueur for about an hour. Then sprinkled dark brown sugar, and a pineapple slice per ham slice.
Put in oven, with a frying pan of water, at 375° for about 40 minutes. Just enough to brown the edges & slightly caramelize the sugar.
The side was scalloped potatoes using half & half for the sauce. Put the potato slices and sauce in the oven for the last half-hour. A little nutmeg, some butter, & black pepper.
Served the ham with horseradish mustard.
I don't care about Easter but my wife wanted something that was Easter-lite. That's what she got.

and asparagus with hollandaise.

Dinner will be salmon, more asparagus, parmesan rice and homemade no-bake lime pie.

Slow-cooker ham (with pineapple) and mashed sweet potatoes.

DAMN tasty.
