Delicious!

My navy bean soup usually includes kidney beans and black beans, as well. Before I mix the ham into the soup, I sauté it in a pan with diced onions and garlic.

Add cubed baby potatoes last. Add them first and they’ll disintegrate before the soup is ready to eat.

Not sure what lamb tastes like. Lol

Super quick & easy:

Brown meat, toss in onions with some garlic

Add 1 qt beef stock & 1 28 oz can crushed tomatoes

Chop cabbage imto chunks & toss into pot

I often chop a few carrots up, but not necessary

Let boil until carrots or cabbage is tender

Others like to add rice to it, but I don't care for it.

Enjoy! It literally takes me about 10 min to get prep done.

Very "New England-ey" with big clam pieces. I can almost smell the ocean with every spoonful.

I also like T Joe's organic roasted red pepper tomato soup. I add wild rice and pine nuts to it.

Panera's cream of chicken with wild rice is also very good.

And, after my 2 years in Japan with the Air Force nurse corps, I have an enduring fondness for miso soup. It imparts an instant feeling of serenity.

It's 23 degrees in out location right now, with wind chill making it feel like 7 - perfect soup weather.

There are so many great Soups.

Top of the list is probably a hearty Beef and Bean Chili with Black Beans, and some Chili Powder, but not enough to be uncomfortable eating.

The next would be Cabbage Soup, which some call Boiled Dinner. It has Pork, Potatoes, Carrots, and Cabbage. A little all-spice gives it the right flavor.

Zoupa Tuscano is another Favorite. Get a Recipe that is close to Olive Garden and you will be just fine.

Speaking of Olive Garden, they also have a Great Pasta Fagioli.

It is hard to beat a Good Bean Soup when it is cold outside. Every Family has their recipe. The one that we usually use is called Capitol Hill Bean Soup after it is almost done put the immersion blender in and use a few of the beans to thicken it.

Chicken Corn chowder. The kind you find pre made in the deli section of the store. I prefer Signature Select from Safeway. Much too creamy and fatty, but you only live once.

95. Greek Easter style Lentil soup my mom would make...

Saturday

I think she'd cook, ?boil onions, carrots, one other veg I can't remember then put them in a strainer, and push out the pulp for thickening, maybe some stale bread crumbs, a touch of garlic (she wasn't a big fan, while i am), of course - the lentils, maybe a bay leaf (should look up recipes 😄 ), and maybe 5 mins before it finished stir In a smallish amount of tomato paste.

I'd already had been cooking beans from scratch myself; but I looked at that, and declared it looked like "pebbles in mud".
Nice.
Eventually after a couple of years of cooking more beans myself, I tried it.
Soooo good.

She also made a great French Onion soup, and a Cream of Brocoli, too.

99. Caldo de Res (Mexican Beef Soup)
Sat Jan 4, 2025, 01:48 AM
Saturday

2 pounds beef shank, with bone

1 tablespoon vegetable oil

2 teaspoons salt

2 teaspoons ground black pepper

1 onion, chopped

3 cups beef broth

1 (14.5 ounce) can diced tomatoes (I use Rotel)

4 cups water

2 medium carrots, coarsely chopped

¼ cup chopped fresh cilantro

2 chayotes, quartered (Optional)

2 ears corn, husked and cut into thirds

1 potato, quartered (Optional)

1 medium head cabbage, cored and cut into wedges

Garnishes:

1 cup chopped fresh cilantro

¼ cup sliced pickled jalapeños

¼ cup finely chopped onion

2 limes, cut into wedges

4 radishes, quartered

Cut the meat from the bone, leaving some on the bone, and cut into cubes.

Cook the meat and bones, seasoned with salt and pepper, in oil until brown.

Cook the onion, then stir in the broth and tomatoes. Simmer until the meat is tender.

Add water, return to a simmer, then add carrots and cilantro.

Stir in the remaining vegetables and cook until tender.

Ladle into bowls and add garnishes.

What is chayote? It is a squash. In Louisiana it is called a mirliton. Just use zucchini chunks.

I don’t use cilantro. Both of us think it tastes like soap. I add fresh parsley instead.

If the beef shanks are a bit skimpy on meat add some cubed chuck roast.

I use frozen mini corn and cook them separately per package direction. Add them to the soup when serving. Slice the cobs into about 1 inch pieces. This is a chunky type soup.

Serve with condiments and warm flour or corn tortillas.

Buen provecho (Enjoy your meal)

A bit of sharp cheddar on top.

Lots of great warmers already mentioned here. Per my sign-on, gumbo, most commonly with tangy sausage and drummettes, augmented with home-made or commercial tabasco would lead the parade. But some 3- or 4-star hot and sour would certainly work, as would almost anything with one or nineteen beans and ham hocks. Clams in either white or red setting. Not to mention broccoli and cheddar!

plus a bay leaf, a few whole peppercorns and a bottle of O'Doul's non-alcoholic beer. Regular dark beer would work fine, but we don't drink alcohol.

If the sauerkraut you buy is too sour, squeeze some of its liquid out before cooking and add more water.

Options include a grated tart apple, grated carrot, or a tablespoon of brown sugar. Some people add chopped onions. I don't because i can't eat onions.

If the liquid level gets too low while cooking, add water.

148. NewHendoLib's Slow Cooker Chicken Posole!
Sat Jan 4, 2025, 01:30 PM
Saturday

Mrs. Hatrack here, posting on Hatrack's account.

As I type, my slow cooker is filled with the ingredients for a fantastic chicken posole recipe that NewHendoLib shared at least 10 years ago, when he was using the user name NorthRaleighLiberal. It is one of our go-tos every winter.

A blizzard is predicted for our area tomorrow, preceded by ice, so I wanted to get a big pot of this made before any chance of losing power.

If NewHendoLib sees this, maybe he can find that recipe in his DU archives and share!

Stay warm, everyone!

158. My all-time fave...
Sat Jan 4, 2025, 09:09 PM
Saturday

… is Irish stew.

Mind you, I’ve spent the last three weeks moving—me with a bad knee in a brace and my son missing a leg—and we’re still living amidst boxes and bags as we try to sort out where everything will go. He had some wonderful friends help us move but they piled everything everywhere, ignoring the rooms marked on each box, so it’s slow going. We’ve been living on crap like granola and frozen burritos, and it’s getting OLD.

And now we’re having a cold snap in Sarasota and I’m dying for this stew—heavy on potatoes, carrots, celery, and a bottle of Guinness stout to make it insanely rich and satisfying.

I’ve found my Instant Pot, got the veg and the Guinness, and tomorrow’s the day. This cannot wait for St. Patty’s day.

We’ll survive the move. I think. Especially with some real food tomorrow.

As for the weather? I grew up in Eastern Iowa and survived all kinds of horrible winters. Used to think nothing of stepping out in socks and t-shirt for firewood or walking to class dripping from the shower but I guess I’m officially wussified after all these years in Florida.
